The Raindrop Cake is the new King of New York

What we know so far is that these waters could also be edible. But, of course, in New York, everything is possible. The last weekend opened its 2016 season Smorgasburg, and with it came new foods. New queues. New hypes. To place ourselves, here came the famous ramen burger, for example. And the season has just begun, we already have king Raindrop Cake (or cake raindrop).

What is it?

It is an adaptation of traditional Japanese dessert that was also viral in 2014, Mizu Shingen Mochi. Its creator, Darren Wong, saw him and wondered why no one had done so far in the US, the country of hybrids (a.k.a nasty) dining. Wong, publicist for the day, then decided to devote his evenings to discover how this dessert like a drop of water did, and tried all kinds of ingredients. "The tricky thing was to keep its shape and retain the water texture," he explained this week after success.

The solution found in the water mixture from natural sources and agar powder (a vegan gelatin). Eureka! But then came the real problem: how to transport a fragile plate? Wong can make between 50 and 100 Raindrop Cakes in your kitchen in about four hours and then must each individually packaged in special boxes that prevent them from moving to arrive intact outlets. For now it is only available in markets Smorgasburg in Williamsburg and Prospect Park, but Wong hopes to expand distribution soon.

What does it taste like?

As the raindrops know little, Wong, the son of a baker, serves dessert accompanied by brown sugar syrup and Kinako (toasted soybean flour) that enhance the taste of water. Anyway, the important thing is not the taste or nutrients, he says, what we're talking about here is textures. And, no, they are not gelatinous texture.

How Much?

Smorgasburg the price is $ 8. Nothing if you think you eat the dessert of the season. What it will cost you time, because the queues expected from now will be epic.

What looks like?

Yes, say it, because you're not the first to think: mamari looks like a silicone implant. That is, a tit. Yes, exactly. And maybe that's why so successful. Although if you ask its creator, he prefers to stress the raindrop. "It reminds me of the scene Vermin when they drink water droplets falling from the leaves," he says. And it goes further: the Raindrop Cake is like a spring storm. "It is an experience of revival, renewal and clarity."

What does it look like?

Strangely. Light, vegan, no calories. It is an instant king. Because you must eat it instantly. Therefore, it is not the king of Instagram. But a dessert for new generations. "It's a dessert for Snapchat" says Wong. "You have to enjoy the moment." And run, because the time goes by fast, like a drop of rain.
